Cooking Tips and Cookbooks Grassfed meats are lower in fat and more flavorful than conventionally rasied meats. Shannon Hayes explains in her cookbook The Grassfed Gourmet, “Cooked improperly, grassfed meats can be tough…..Put away your timer, get a good meat thermometer.” She also recommends turning down the heat and learning when to use dry-heat and when to use moist-heat cooking methods.
